Featuring the food traditions of family gatherings from different pockets of our community. Listen for chef secrets from Prime Corn, Boca Dulce, Facil Taqueria, Jamaica's Kitchen, Fillings and Emulsions, James' Gourmet Pies, and home cook Khalilah Tso. Plus, a playlist to match!
Tonight we wanted to do something different for Thanksgiving, to show that food connects families – the ones we’re born into, and the ones we choose — across all origin stories. So tonight, we’re setting A Bigger Table, with food traditions from a great group of local chefs:
Valene MC makes fry bread with Khalilah Tso, then learns the secrets of tamales with Wendy Juarez of Prime Corn. You can sample Wendy's pre-Hispanic Mexican cuisine at the Salt Lake City & County Building, 451 S. State St., where she has a pop-up cafe through Dec. 29. Look for her pop-up on the east side of the building, downstairs, from 8:00 a.m. to 5:00 p.m. Monday through Friday.
Connor Estes meets up with a couple of food truck folks, including:
Chef Donovan of Jamaica's Kitchen, who says it was his grandmother who helped him learn to make his signature dish.
Dallas Olson, chef-owner of Fácil Taqueria, whose tacos have taken him and his wife from food truck to bricks-and-mortar in Holladay.
Lara Jones visits BocaDulce, the home-based kitchen of Roxana Boca Negra. A Spice Kitchen Incubator graduate, Roxanna bakes traditional Salvadoran desserts. To place your order for her Sweet Salvadoran Quesadilla, click here.
Chef Adalberto Diaz of Fillings & Emulsions talks with Lara about the flavors that make a dish uniquely Cuban – including Cuban coffee. He now has two locations -- one on Main Street in SLC and another in West Valley City. Click here for details, and plan your visit.
James Edwards of James’ Gourmet Pies shares the key ingredient in his popular sweet potato pies. In addition to online orders, James has a kiosk at Layton Hills Mall this pie season.
A big thanks to Spice Kitchen Incubator, a project of the The International Rescue Committee in Salt Lake City. The nonprofit brings together refugees and other disadvantaged community members interested in starting a full or part-time food business. They connected us with several of our chefs for tonight’s show.
